Low Carb Cinnamon Sugar Donut Muffins
Donut Muffin Ingredients:
◦1 1/2 cups Almond Flour
◦1/2 cup Truvia Baking Blend, powdered
◦2 tbsp. Psyllium Husk Powder
◦1/2 cup Heavy Cream
◦1/3 cup Salted Butter
◦2 large Eggs
◦1 1/2 tsp. Baking Powder
◦1 tsp. Vanilla Extract
◦1/4 tsp. Nutmeg
◦1/4 tsp. Allspice
◦1/4 tsp. Liquid Stevia
◦1/8 tsp. Ground Clove
◦1/8 tsp. Ground Ginger
Cinnamon “Sugar” Coating Ingredients:
◦1/4 cup Butter, melted
◦1/4 cup Truvia Baking Blend
◦1 tsp. Cinnamon
**Tip: if you use Erythritol in place of the Truvia Baking Blend you will lower your net carbs and calories for this recipe.
1. Preheat oven to 350F.
2.Brown the butter in a saucepan over medium-low heat, stir occasionally. Once butter is browned, cool completely.
3.Powder the Truvia in a spice grinder, then mix all dry ingredients together.
4. Add all wet ingredients (including browned butter) to the dry ingredients and mix with an electric mixer until the dough is formed.
5.Divide dough out between 12 cupcake molds and bake for 20 minutes or until edges are browned.
6.Melt 1/4 cup butter, then combine the cinnamon and truvia or sweetener of your choice.
7.Dip cooled muffins into butter, then into cinnamon “sugar” mixture.
