Chicken and Spinach Fritatta (LOW CARB)
2 chicken breasts, diced and sauted
2 cups spinach, chopped
4 eggs and 1 cup of egg whites (4 egg whites)
1/2 cup cheese, grated
Add the chopped spinach to the saute’d chicken, let it wilt a little. Beat the eggs and egg whites together, pour over the chicken and spinach. Add the cheese over the top. Cover and bake for 10 minutes at 400° F.
