Monterey Chicken (2 servings)
2 boneless chicken breasts
1 T. olive oil
1 tsp. soy sauce
my house seasoning (equal parts garlic powder, onion powder and black pepper…store in an airtight container)
BBQ sauce (I found Stubb’s BBQ with NO HFCS) really good!
shredded Colby jack cheese
1 green onion, chopped
1 roma tomato, diced
If your chicken breasts are thick, cut them in half (freezing any extra you have) or pound them out to about 1/2″ thickness. Place the chicken on a plate and brush with the olive oil and then the soy sauce, sprinkle each breast with some of the house seasoning. Heat the oven to 400 degrees. Line a baking sheet with tinfoil and place the chicken on the baking sheet and put in the oven for 15 minutes. Remove the chicken and top each breast with a good spoonful of BBQ sauce. Put back in the oven for 10 minutes. Remove the chicken from the oven and top each with a little of the cheese and return to the oven for a couple of minutes to melt the cheese. Serve the chicken with diced tomatoes on top and chopped green onions
