Avocado Brownies
4 eggs
1 cup stevia in the raw
8 oz sugar free semi-sweet chocolate chips
1/2 cup cacao powder
1/2 tsp sea salt
2 tsp vanilla extract
2 ripe avocados, mashed smooth
1/2 cup almond meal
1)Using an electric mixer, whip the eggs and sugar.
2)Melt the chocolate chips. I put them in the microwave for 1 min 20 seconds at medium heat, then mixed and did it for an additional 30 seconds. This will vary by microwave.
3)Slowly add the melted chocolate to your eggs and sugar mixture and mix it as you add each amount.
4)Once all is well combined, use a wooden spoon to blend in the cacao powder, almond meal, salt and vanilla extract. This will be thick when done.
5) Preheat oven to 350°F. It takes a little time to do the above so wait till the end to pre-heat.
6)Mash up the avocados by hand and then use an electric mixer to get it as smooth as possible. If you have chunks of avocado, they will show up in your brownies.
7)Now fold in the avocados to your chocolate mix. You can use the electric mixer again if you want. I started off with a spoon then finished off with the mixer.
8)Pour into an 8×8 baking pan and bake for about 25-30 minutes. Test the middle as it nears 25 minutes and when it comes out clean, you are done!

(the carbs are based on subtracting the sugar alcohols from the chocolate chips. Sugar alcohols are deducted like fiber with low carb recipes)
