Loaded Tuna Salad
2 cans tuna in water, drained well
1 small whole carrot, peeled and diced small
2 Tbsp onion, diced small
¼ bell pepper, seeded and diced small
2 radishes, diced small
½ rib celery, diced small
1 Tbsp white wine vinegar
1 Tbsp olive oil
1-2 Tbsp mayonnaise or salad dressing
1 tsp yellow mustard
S & P TT (to taste)
Place eggs in small saucepan with cold water to cover. Boil for 2 minutes and remove from heat, place lid on pan. Allow to sit for 12 minutes (perfect boiled eggs). Meanwhile, prepare rest of ingredients and place in med sized bowl. Add vinegar and oil. Mix gently and season with S & P. After eggs are done, peel and cut into small pieces and add to the mix. Add mayo and mustard. Gently stir. Adjust seasoning per taste.
