Julie’s Low Carb Cauliflower Dip

I make this low carb recipe on a regular basis!! It is a great side dish and yummy re-heated!
Ingredients:
1 20 oz bag of frozen cauliflower or fresh cauliflower enough for 3 cups
1 cup sour cream
3/4 cup shredded cheddar cheese
3 green onions, finely chopped
3 -6 slices cooked crumpled bacon
salt and pepper
Directions:
Puncture bag and cook in microwave for 5 min, drain
Pre-heat oven to 350.
Chop cooked cauliflower into small pieces.
Mix sour cream, 1/2 of the green onions, 1/2 of the cheese, 1/2 of the bacon, and salt and pepper to taste in medium bowl.
Stir in the cauliflower.
Place in medium baking dish and sprinkle remaining cheese and bacon on top.
Bake for 20 minutes.
Sprinkle the remaining green onions on top just before serving.
