Crustless Tuna Quiche

3 eggs, slightly beaten
1/2 c. miracle whip or mayonnaise
1/2 c. almond milk (any will work)
2 Tbsp. flour
1/4 c. seasoned bread crumbs
1 tsp. Old Bay seafood seasoning
1 c. mozarella cheese, shredded
1 celery stalk, finely diced
1 can tuna, drained
1/2 tsp. basil
1 can mushrooms, drained
1 small onion, finely diced
Preheat oven to 350°.
In a medium bowl, beat all but tuna and cheese with a wire whisk until mixture is blended well. Fold in cheese and tuna.
Pour mixture into a pan that lightly coated with cooking spray.
Bake about 45-50 minutes or until you get a clean knife testing by inserting into the center of the quiche & it comes out clean. You want the top slightly browned and the center not jiggly when shook. ═════════ღღ═════════
